Three-Bean Cucumber Salad

Ingredients

Salad Base

  • 1 can black beans (drained & rinsed)
  • 1 can dark red low sodium kidney beans (drained & rinsed)
  • 1 can garbanzo beans (drained & rinsed)
  • 1 1/2 cucumbers, diced
  • 1 orange bell pepper, sliced
  • 1 handful matchstick carrots
  • 1 handful feta crumbles
  • 1/2 red onion, sliced (optional)

Dressing

  • 1/4 cup olive oil
  • 1 tblsp lime juice
  • 2 tblsp red wine vinegar
  • 1 tblsp dijon (optional)
  • 1 tsp sugar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika (optional)
  • 1/2 tsp cumin (optional)

Instructions

  1. Whisk together all dressing ingredients & taste to adjust seasoning.
  2. Combine all drained beans & veggies in large bowl.
  3. Pour dressing into bowl over everything.
  4. Mix & chill for ~30 minutes.
  5. Portion into bowl to eat & add feta!

Additional Information

  • The black beans, kidney beans, and garbanzo beans should all be drained and rinsed before combining.
  • Feta is added at the end when portioning, rather than mixed in during the chill step.
