Cold Three-Bean Veggie Salad

Ingredients

  • 1 can black beans, drained & rinsed
  • 1 can chickpeas, drained & rinsed
  • 1 can kidney beans, drained & rinsed
  • 1 cucumber, diced
  • 1 mini red onion, finely diced
  • 1 bell pepper, diced
  • 1 cup matchstick carrots
  • 1–2 tablespoons fresh dill, chopped (optional)

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon or lime juice
  • 1 teaspoon sugar or honey
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika (optional)
  • 1/2 teaspoon cumin (optional)

Instructions

  1. Combine all beans and chopped vegetables in a large bowl.
  2. Whisk together all dressing ingredients and taste to adjust seasoning.
  3. Pour dressing over salad and mix gently.
  4. Chill at least 30 minutes before serving.
