Ingredients
- 1 can black beans, drained & rinsed
- 1 can chickpeas, drained & rinsed
- 1 can kidney beans, drained & rinsed
- 1 cucumber, diced
- 1 mini red onion, finely diced
- 1 bell pepper, diced
- 1 cup matchstick carrots
- 1–2 tablespoons fresh dill, chopped (optional)
Dressing
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon or lime juice
- 1 teaspoon sugar or honey
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika (optional)
- 1/2 teaspoon cumin (optional)
Instructions
- Combine all beans and chopped vegetables in a large bowl.
- Whisk together all dressing ingredients and taste to adjust seasoning.
- Pour dressing over salad and mix gently.
- Chill at least 30 minutes before serving.
