Lemon Herb Basmati Rice

Ingredients
- 1 cup basmati rice
- 1 ¾ cups water (or broth for more flavor)
- 1–2 tsp olive oil or butter
- 1–2 Tbsp lemon juice (fresh is best)
- ½ tsp lemon zest (optional but amazing)
- ¼–½ tsp dried oregano
- ¼–½ tsp dried parsley or basil
- Black pepper to taste
- Salt to taste
Instructions
- Rinse the rice until the water runs mostly clear.
- In a pot, combine the rice, water or broth, and a pinch of salt.
- Bring to a boil, then reduce heat to low, cover, and simmer for 14–16 minutes until fluffy.
- Turn off heat and let sit (covered) for 5 minutes.
- Fluff with a fork and stir in the olive oil or butter, lemon juice, (optional) lemon zest, oregano, parsley or basil, and black pepper.
- Taste and add a little extra lemon or salt if needed.
Additional Information
Optional Add-Ins:
- 1 finely chopped garlic clove sautéed in butter first.
- A handful of chopped fresh parsley if you have it.
- A small splash of broth or white wine stirred in after cooking for richness.
