Lemon Herb Basmati Rice

Ingredients

  • 1 cup basmati rice
  • 1 ¾ cups water (or broth for more flavor)
  • 1–2 tsp olive oil or butter
  • 1–2 Tbsp lemon juice (fresh is best)
  • ½ tsp lemon zest (optional but amazing)
  • ¼–½ tsp dried oregano
  • ¼–½ tsp dried parsley or basil
  • Black pepper to taste
  • Salt to taste

Instructions

  1. Rinse the rice until the water runs mostly clear.
  2. In a pot, combine the rice, water or broth, and a pinch of salt.
  3. Bring to a boil, then reduce heat to low, cover, and simmer for 14–16 minutes until fluffy.
  4. Turn off heat and let sit (covered) for 5 minutes.
  5. Fluff with a fork and stir in the olive oil or butter, lemon juice, (optional) lemon zest, oregano, parsley or basil, and black pepper.
  6. Taste and add a little extra lemon or salt if needed.

Additional Information

Optional Add-Ins:

  • 1 finely chopped garlic clove sautéed in butter first.
  • A handful of chopped fresh parsley if you have it.
  • A small splash of broth or white wine stirred in after cooking for richness.
