Ingredients

Crab Cakes

  • 1 lb imitation crab, chopped
  • 1 egg
  • ¼ cup mayo
  • ½ cup breadcrumbs
  • 1 tsp Dijon mustard
  • 1 tsp Old Bay
  • 1 tbsp lemon juice
  • ¼ cup grated Parmesan
  • 2 green onions, chopped

Lemon Aioli

  • ½ cup mayonnaise
  • 1 small garlic clove, finely grated
  • 1–2 tbsp lemon juice

Instructions

  1. Prepare the Aioli: Mix the mayonnaise, grated garlic, and lemon juice together. Chill for 10 minutes.
  2. Prep the Crab: Dry the imitation crab REALLY well: chop, then press between paper towels until no moisture comes out.
  3. Make the Mixture: Mix the crab with the egg, mayo, breadcrumbs, Dijon, Old Bay, lemon juice, Parmesan, and green onions until just combined.
  4. Chill: Chill the mixture for 30–45 minutes.
  5. Form: Form the mixture into patties.
  6. Cook: Pan-fry in neutral oil and a little butter for 3–4 minutes per side until deeply golden.
  7. Finish: For extra crispness, finish in a 400°F oven for 5–7 minutes.

Additional Information

  • Ensure the crab is very dry to prevent the cakes from falling apart.
  • Recipe uses imitation crab.
