Ingredients
Crab Cakes
- 1 lb imitation crab, chopped
- 1 egg
- ¼ cup mayo
- ½ cup breadcrumbs
- 1 tsp Dijon mustard
- 1 tsp Old Bay
- 1 tbsp lemon juice
- ¼ cup grated Parmesan
- 2 green onions, chopped
Lemon Aioli
- ½ cup mayonnaise
- 1 small garlic clove, finely grated
- 1–2 tbsp lemon juice
Instructions
- Prepare the Aioli: Mix the mayonnaise, grated garlic, and lemon juice together. Chill for 10 minutes.
- Prep the Crab: Dry the imitation crab REALLY well: chop, then press between paper towels until no moisture comes out.
- Make the Mixture: Mix the crab with the egg, mayo, breadcrumbs, Dijon, Old Bay, lemon juice, Parmesan, and green onions until just combined.
- Chill: Chill the mixture for 30–45 minutes.
- Form: Form the mixture into patties.
- Cook: Pan-fry in neutral oil and a little butter for 3–4 minutes per side until deeply golden.
- Finish: For extra crispness, finish in a 400°F oven for 5–7 minutes.
Additional Information
- Ensure the crab is very dry to prevent the cakes from falling apart.
- Recipe uses imitation crab.
